My lineage is deeply rooted in this tradition, with my family operating a distillery that has stood for over 120 years in the Yaeyama Islands. This ancestral wisdom taught me that Black Koji is more than a catalyst for fermentation; it is an ancient energy source that bridges the gap between the terrestrial and the cosmic.

As the Wagyu reaches its peak over the flame, we release a fine, ethereal mist of Aged Awamori (Koshu), specially crafted by my own family’s distillery in Ishigaki Island—an institution that has preserved the traditional soul of Ryukyu spirits for over 120 years.
